  • 2½ cups shredded Mexican cheese blend – Creates a creamy, golden, and bubbly topping.
  • 2 tablespoons chopped fresh cilantro – Adds freshness and color.

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9 × 13-inch baking dish.
  2. Combine shredded rotisserie chicken, black beans, corn, onion, garlic, chili powder, cumin, paprika, salt, pepper, and ½ cup enchilada sauce.
  3. Warm the tortillas until flexible.
  4. Spread about ¾ cup enchilada sauce over the bottom of the baking dish.
  5. Arrange a layer of tortillas over the sauce.
  6. Spread half of the chicken mixture evenly over the tortillas.
  7. Add more enchilada sauce and sprinkle with shredded cheese.
  8. Repeat the tortilla, chicken, sauce, and cheese layers.
  9. Finish with a final tortilla layer, remaining enchilada sauce, and remaining cheese.
  10. Cover loosely with foil and bake for 20 minutes.

  12. Let the casserole rest for 10–15 minutes.
