  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • Salt and black pepper to taste

Optional Garnishes

  • Fresh parsley
  • Fresh thyme
  • Lemon wedges
  • Grated Parmesan cheese
  • Fresh rosemary
  • Cracked black pepper


Instructions

  1. Preheat the oven to 400°F (200°C) and grease a large baking sheet.
  2. Whisk together olive oil, lemon juice, lemon zest, garlic, herbs, paprika, salt, and pepper.
  3. Coat the chicken with the marinade and let it rest for 20–30 minutes.
  4. Toss the halved potatoes with olive oil, garlic powder, Italian seasoning, paprika, salt, and pepper.
  5. Arrange the potatoes around the baking sheet and place the marinated chicken in the center.
  6. Roast for 35–40 minutes, stirring the potatoes halfway through cooking.
  7. Broil for 2–3 minutes if desired for extra browning.
  8. Rest the chicken for 5 minutes before slicing.
  9. Garnish with fresh parsley, thyme, lemon wedges, and optional Parmesan cheese.
  10. Serve hot with the roasted potatoes and your favorite side salad or vegetables.
