For the Roasted Vegetables

Instructions

  1. Pat the chicken breasts dry and gently pound thick pieces to an even thickness.
  2. Whisk together olive oil, lemon juice, lemon zest, garlic, oregano, thyme, rosemary, paprika, salt, and black pepper.
  3. Coat the chicken thoroughly with the lemon herb marinade.
  4. Let the chicken marinate for at least 15–20 minutes.
  5. Wash and cut the potatoes, carrots, bell pepper, zucchini, and red onion.
  6. Toss the vegetables with olive oil, oregano, garlic powder, salt, and black pepper.
  7. Preheat the oven to 425°F (220°C).
  8. Spread potatoes and carrots evenly on a large baking sheet.
  9. Roast the potatoes and carrots for about 15 minutes.
  10. Remove the baking sheet and add the bell pepper, zucchini, and red onion.
  11. Place the marinated chicken among the vegetables.
  12. Return the baking sheet to the oven and roast for 18–25 minutes.
  13. Check the chicken with a meat thermometer and make sure it reaches 165°F (74°C).
  14. If desired, broil for 1–2 minutes for extra browning, watching carefully.
  15. Remove from the oven and let the chicken rest for 5 minutes.
  16. Slice the chicken and garnish with fresh herbs and lemon wedges.
  17. Serve warm with the roasted vegetables and your favorite side.
