Instructions

  1. Cook and cool the chicken, then chop or shred it into bite-sized pieces.
  2. Toast pecans in a dry skillet over medium-low heat for 3–5 minutes and cool.
  3. Wash, core, and slice or dice the apples.
  4. Thinly slice the red onion and chop the fresh parsley.
  5. Wash and thoroughly dry the salad greens.
  6. Whisk together mayonnaise, Greek yogurt, honey, Dijon mustard, apple cider vinegar, olive oil, garlic powder, salt, and pepper.
  7. Add mixed greens to a large salad bowl.
  8. Add chicken, apples, toasted pecans, dried cranberries, red onion, and parsley.
  9. Add feta cheese if desired.
  10. Drizzle the honey-Dijon dressing over the salad.
  11. Gently toss until the ingredients are evenly coated.
