For the Watermelon

  • 1 small seedless watermelon – Cut into 1-inch thick steak-like slices.

For the Honey Lime Glaze

  • 1 tablespoon extra virgin olive oil – Creates a smooth glaze.

Instructions

  1. Preheat the grill to medium-high heat.
  2. Slice the watermelon into 1-inch thick steaks and pat dry.
  3. Whisk together the honey lime glaze ingredients.
  4. Brush the watermelon lightly with olive oil and season with salt and pepper.
  5. Grill the watermelon for 2–3 minutes per side.
  6. Brush with the honey lime glaze during the final minute of grilling.
  7. Remove from the grill and transfer to a serving platter.
  8. Garnish with mint, basil, feta or goat cheese, and toasted pistachios if desired.
  9. Add an extra squeeze of fresh lime juice.
  10. Serve immediately and enjoy.
