For the Garlic Butter Sauce

  • 1 tablespoon fresh lemon juice – Brightens the rich butter sauce.

For the Vegetables

Instructions

  1. Pat the chicken dry and season with paprika, Italian seasoning, onion powder, salt, and black pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add chicken in a single layer and cook for 4–5 minutes, turning occasionally, until golden and cooked to 165°F (74°C).
  4. Remove the chicken and set aside.
  5. Add sliced zucchini to the skillet and cook for 3–5 minutes until lightly golden and tender.
  6. Add halved cherry tomatoes and cook for 2–3 minutes until slightly softened.
  7. Reduce heat to medium and add butter and minced garlic.
  8. Cook for 30–60 seconds until the garlic is fragrant.
  9. Return the cooked chicken to the skillet and toss with the vegetables.
  10. Add fresh lemon juice and lemon zest.
  11. Sprinkle with fresh parsley and adjust seasoning to taste.
  12. Garnish with Parmesan, red pepper flakes, basil, or extra parsley.
  13. Serve hot with your favorite low-carb or hearty side dishes.
