  • Salt and black pepper to taste

Instructions

  1. Cut the chicken into bite-sized pieces and season with Italian seasoning, paprika, onion powder, salt, and pepper.
  2. Slice the zucchini into thick half-moons and season lightly.
  3. Heat olive oil in a large skillet over medium-high heat.
  4. Cook the chicken until golden, then add butter and garlic during the final minute. Remove the chicken.
  5. Cook the zucchini in the same skillet with olive oil and butter until tender-crisp.
  6. Return the chicken to the skillet and toss everything together in the garlic butter sauce.
  7. Taste and adjust the seasoning as needed.
  8. Garnish with parsley, Parmesan, red pepper flakes, and a squeeze of lemon juice.
