For the Chicken and Potatoes

  • pounds boneless, skinless chicken thighs – Chicken thighs stay juicy and flavorful during cooking. Chicken breasts can also be used with adjusted cooking time.
  • 1 pound baby Yukon Gold or baby potatoes – Their creamy centers and firm texture make them excellent for skillet cooking.
  • 2 tablespoons olive oil – Helps brown the chicken and potatoes.
  • 4 tablespoons unsalted butter – Creates the rich, buttery base for the sauce.
  • 6 cloves garlic, minced – Adds bold, aromatic garlic flavor.
  • 1 teaspoon Italian seasoning – Brings together herbs that complement the chicken and potatoes.
  • ½ teaspoon smoked paprika – Adds gentle smokiness and beautiful color.
  • 1 teaspoon salt – Enhances the overall flavor.
  • ½ teaspoon black pepper – Adds mild seasoning and warmth.
  • 1 teaspoon fresh rosemary, chopped – Adds a fragrant herbal flavor.
  • 1 teaspoon fresh thyme leaves – Complements the garlic and butter.
  • 2 tablespoons fresh parsley, chopped – Adds freshness and color.
  • 1 tablespoon lemon juice – Brightens the rich butter sauce.

Instructions

  1. Wash and cut baby potatoes into evenly sized pieces.
  2. Microwave potatoes with a little water for 5–6 minutes, then drain well.
  3. Season chicken with salt, pepper, Italian seasoning, and smoked paprika.
  4. Mix butter with minced garlic, rosemary, and thyme.
  5. Heat olive oil in a large skillet over medium-high heat.
  6. Add potatoes and cook for 6–8 minutes until golden and tender.
  7. Remove potatoes and set aside.
  8. Add seasoned chicken to the skillet and cook until browned and cooked through.
  9. Reduce heat and add the garlic butter mixture.
  10. Cook for 1–2 minutes until fragrant.
  11. Return potatoes to the skillet and toss with the chicken and garlic butter.
  12. Add fresh parsley and cook for another 1–2 minutes.
  13. Remove from heat and drizzle with lemon juice.
  14. Check that the chicken has reached at least 165°F (74°C) internally.
  15. Garnish with fresh parsley and serve hot.

Notes

  • Cut the potatoes evenly so they cook at the same rate.
  • Don’t overcrowd the skillet for beautifully browned chicken and potatoes.
  • Finish with fresh lemon juice and parsley for extra freshness.
