For the Peppers and Onions

Instructions

  1. Pat the chicken dry and cut it into thin strips or bite-sized pieces.
  2. Combine chili powder, cumin, paprika, garlic powder, oregano, onion powder, salt, black pepper, and optional cayenne.
  3. Toss the chicken with half of the fajita seasoning.
  4. Heat olive oil in a large skillet over medium-high heat.
  5. Add chicken and cook for 5–7 minutes until golden and cooked through to 165°F (74°C).
  6. Remove the chicken from the skillet and set aside.
  7. Add remaining olive oil, sliced peppers, and onions to the skillet.
  8. Cook for 5–7 minutes until the vegetables are tender-crisp and lightly browned.
  9. Add minced garlic and remaining fajita seasoning and cook for 30–60 seconds.
  10. Return the cooked chicken to the skillet and toss with the vegetables.
  11. Cook for another 1–2 minutes to combine the flavors.
  12. Remove from heat and drizzle with fresh lime juice.
  13. Garnish with fresh cilantro and optional jalapeños.
  14. Serve hot with tortillas, rice, guacamole, salsa, sour cream, or your favorite toppings.
