Instructions

  1. Pat the chicken breasts dry and season both sides with Italian seasoning, paprika, garlic powder, salt, and black pepper.
  2. Lightly grease the crockpot with nonstick cooking spray or olive oil.
  3. Place the seasoned chicken breasts in an even layer inside the crockpot.
  4. Add minced garlic and chopped sun-dried tomatoes over the chicken.
  5. Pour in the chicken broth and sprinkle with Italian seasoning and red pepper flakes.
  6. Cover and cook on LOW for 3–4 hours, or until the chicken reaches 165°F (74°C).
  7. Carefully remove the cooked chicken and keep it loosely covered.
  8. Stir the heavy cream into the cooking liquid.
  9. Gradually add freshly grated Parmesan and stir until the sauce becomes creamy.
  10. Add fresh spinach and cover for 5–10 minutes until wilted.
  11. Stir the spinach into the creamy sauce.
  12. Return the chicken to the crockpot and spoon the sauce over the top.
  13. Allow everything to warm together for 2–3 minutes.
  14. Garnish with fresh parsley, Parmesan, and red pepper flakes if desired.
  15. Serve warm with pasta, rice, mashed potatoes, vegetables, or crusty bread.
