Ingredients

Scale

For the Pasta Salad

  • 12 ounces rotini or bow-tie pasta – Holds the creamy pesto dressing beautifully and gives the salad a satisfying texture.
  • 2 cups cooked chicken breast, diced or shredded – Adds lean protein and makes the pasta salad hearty enough for a complete meal.
  • 1 cup cherry tomatoes, halved – Adds juicy freshness, natural sweetness, and vibrant color.
  • 1 cup cucumber, diced – Provides a crisp and refreshing crunch.
  • ½ cup red bell pepper, diced – Adds sweetness, crunch, and beautiful color.
  • ½ cup baby spinach, chopped – Adds freshness and extra vegetables.
  • ½ cup shredded or grated Parmesan cheese – Brings savory, salty richness to the salad.
  • ¼ cup red onion, finely diced – Adds a mild sharp flavor that balances the creamy dressing.
  • ¼ cup sliced black olives – Adds a delicious savory element.
  • ¼ cup fresh basil, chopped – Enhances the fresh pesto flavor.

For the Creamy Pesto Dressing

  • ½ cup basil pesto – Provides the signature herby, garlicky, and nutty flavor.
  • ½ cup mayonnaise – Creates a rich and creamy dressing.
  • ¼ cup plain Greek yogurt – Adds tanginess while keeping the dressing smooth and balanced.
  • 2 tablespoons lemon juice – Brightens the flavors and prevents the dressing from tasting too heavy.
  • 1 tablespoon milk or pasta water – Helps loosen the dressing to the perfect consistency.
  • ¼ teaspoon garlic powder – Adds an extra layer of savory flavor.
  • Salt and black pepper, to taste – Enhances all the ingredients.
