For the Cream Cheese Swirl

  • ¼ cup granulated sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a 9×5-inch loaf pan.
  2. Grate the zucchini and lightly remove excess moisture.
  3. Beat together the cream cheese filling ingredients until smooth.
  4. Whisk together all dry ingredients.
  5. Mix the wet ingredients until well combined.
  6. Stir the wet ingredients into the dry ingredients just until combined.
